  • Asafoetida one pinch
  • Onion, finely chopped – 1/2 cup
  • Ginger, mashed/grated – 1 tsp
  • Garlic, mashed/grated – 1 tsp
  • Tomatoes, finely chopped – 3/4 cup
  • Garam masala – 1/2 tsp
  • Red chili powder – 1/2 tsp
  • Cumin powder – 1 tsp
  • Salt to taste
  • Fresh coriander for garnish

Paneer Paratha

  • Whole wheat flour – 1 cup
  • Paneer – 100 gms
  • Salt to taste
  • Fresh coriander, chopped – 1/4 cup
  • Garam masala – 1/2 tsp
  • Red chili powder – 1/2 tsp
  • Cumin powder – 1 tsp
  • Pepper powder – 1/2 tsp

  1. Rinse and soak masoor dal for a few minutes or directly pressure cook with salt and 2 cups of water for three to four whistles on medium low heat.
  2. In the meanwhile, heat ghee in a small pan, add asafoetida, cumin seeds and let it splutter.
  3. Add onion, garlic and ginger. Sauté for 3-4 minutes or until the onions are sufficiently browned.
  4. Add tomatoes and sauté for a few more minutes or until tomatoes leave oil on the sides.
  5. Now add garam masala, red chili powder, cumin powder and mix well.
  6. Switch off the gas.
  7. Once the masoor dal is cooked properly, take it out of the pressure cooker and put in the pan, switch on the gas and let it come to a boil.
  8. Sprinkle fresh coriander on top to serve.

For paneer paratha

  1. Knead a medium soft dough with whole wheat flour and keep aside to rest.
  2. Crumble paneer and add salt, pepper, red chili powder, garam masala, cumin powder, freshly chopped coriander and mix well.
  3. Roll a small portion of the dough into a small circle. Place a spoonful of the paneer mixture in the centre of the small circle. Now take the circle and close it from all sides and make into a ball.
  4. Flatten the ball with your hand and roll lightly to a round and thick paratha.
  5. Cook the paratha on medium heat on a tawa/griddle until nice and crisp.
  6. Similarly make other parathas and serve hot with hot masoor dal.
