Rainbow Crostini Bytes

You eat with your eyes first and the visual appeal is more when you add colors to your daily food platter. Much like painting, a food plate is also a canvas ready to be painted with our imagination and creativity. I was almost compulsively stuck with the idea of rainbow food but without the artificial colors. Artificial colors are a major put off!

We anyway should include colored vegetables and fruits in our day to day lives, bringing in the visual pleasure and health because each color has a different nutrient to give. The conception of these crostini bytes was super simple. I just chose the vegetables I make spreads with and put them all together.

Bread 1

Each spread that I am going to put in this post takes just 10 minutes so even if you decide not to make all of these together, it will only take you 10 minutes to put together one delicious spread at a time! So, now you have 7 different delicious spread ideas, one for each day of the week!! Are you ready to party?

Here are the various 10 minute spreads!

Boursin Cheese Spread (White)Boursin Cheese

  • Cottage cheese, cubed – 200 gms
  • Thick curd or Greek yogurt – 4 tbs
  • Cheese cube – 50 gms
  • Garlic clove, finely chopped – 1
  • Dried basil – 1/2 tsp
  • Dried celery – 1/4 tsp
  • Dried chives – 1/4 tsp
  • Fresh Parsley – 1/4 cup
  • Salt and Pepper to taste

Direction

  1. Pulse the cottage cheese & cheese until crumbly.
  2. Add curd and grind into a smooth paste. Add more if required. What you have now is cream cheese. Keep 4 tbs of cream cheese aside.
  3. Add the rest of the ingredients to the cream cheese and grind it all together until mixed nicely.
  4. If it’s too thick, then add a little more curd to make it spreadable.

Mushroom Pate (Brown)Mushroom patte

  • Olive oil – 1/2 tsp
  • Onion, finely chopped – 1/4 cup
  • Garlic, finely chopped – 1 tsp
  • Mushrooms, finely chopped – 100 gms
  • Thyme – 1/2 tsp
  • Salt and Pepper
  • Cream cheese – 2 tbs
  • Parsley, chopped – 1 tbs
  • Soy Sauce – 1/2 tsp (optional)
  • Black olives, chopped – 1 tbs (optional)

Direction

  1. In a pan, heat olive oill (or butter), add onion and garlic. Mix till onion is translucent.
  2. Now add mushrooms and sauté till soft and cooked. Remove if there is any extra water from the pan.
  3. Add salt, pepper and thyme and switch off the gas.
  4. Once it’s a bit cold, blend together mushrooms mixture, cream cheese, parsley until you get a coarse spread. Add black olives and mix.
  5. I add soy sauce for color, you can totally avoid it if you want.

Purple Cabbage Cole Slaw (Purple)Purple Cabbage Coleslaw2

  • Purple cabbage, finely chopped – 1/2 cup
  • Cream cheese – 1 tbs
  • Garlic, finely chopped – 1 tsp
  • Mayonnaise – 2 tbs (or thick curd)
  • Salt and pepper to taste
  • Honey – 1/2 tsp

Direction

  1. Mix everything together to get a nice cole slaw and make yummy sandwiches, crostinis and what not!

Beetroot Spread (Pink)Beetroot Spread

  • Beetrooot, grated and steamed – 1/2 cup
  • Cream cheese – 1 tbs
  • Garlic, finely chopped – 1 tsp
  • Thick curd – 2 tbs
  • Salt and pepper to taste
  • Lemon juice – 1/2 tsp

Direction

  1. Mix everything together to get a nice pink colored spread for your bread.

Peas Spread (Green)Peas Spread

  • Butter – 1 tbs
  • Onion, finely chopped – 1/4 cup
  • Garlic, finely chopped – 1/2 tsp
  • Peas, steamed – 1 cup
  • Warm Milk – 1/2 cup
  • Salt and pepper to taste

Direction

  1. Grind peas into a coarse paste.
  2. Heat butter in a pan, sauté onion and garlic till they are translucent.
  3. Add peas, salt and pepper. Mix thoroughly till the raw smell of peas is gone and it looks cooked.
  4. At this stage add warm milk and stir until all the milk dries up and what you have is a green spread.

Corn Sprad (Yellow)Corn patte1

  • Butter – 1 tbs
  • Onion, finely chopped – 1/4 cup
  • Garlic, finely chopped – 1/2 tsp
  • Green chili paste – 1/2 tsp (optional)
  • Corn, steamed – 1 cup
  • Warm Milk – 1/2 cup
  • Salt and pepper to taste

Direction

  1. Grind corn into a coarse paste.
  2. Heat butter in a pan, sauté onion, green chili paste and garlic till they are translucent.
  3. Add corn, salt and pepper. Mix thoroughly till the raw smell of corn is gone and it looks cooked.
  4. At this stage add warm milk and stir until all the milk dries up and what you have is a yellow spread.

Tomato and Cheese Spread (Red)tomato

  • Boursin Cheese Spread – 1 tbs
  • Cherry tomatoes, halved – 3
  • Parsley, finely chopped – 1 tbs

Direction

  1. Spread the boursin cheese on the crostini or toasted bread.
  2. Add a layer of cherry tomatoes and sprinkle parsley on top.
  3. You can add any vegetable here and make it into a nice sandwich.
