This post and the video is all you need for making any kind of Pasta at home. I have covered the basic sauces and various pastas commonly consumed in India. With these basic sauces and pasta of your choice, you can make a unique pasta dish every day for two weeks straight! How cool is that?

A spicy red sauce is the quint essential Pasta sauce which suits the Indian pallate and is my personal favorite too. There are so many variations you can do with just this sauce. Choose a different vegetable, or a different cheese, or a different pasta or simply choose a different method of cooking.

A green sauce is the most aromatic and flavorful of all. Subtle hint of basil, creaminess from the nuts in the pesto and the saltiness of the spinach, make for a healthy and a flavor packed pasta dish. I have paired this sauce with Spaghetti and love this sauce with zucchini noodles or zoodles (have you tried them yet?) as well.

A white sauce is the most cooked sauce in my house because I use it in a variety of dishes. In fact, will soon share a tip post which will help you make this sauce within a few minutes without too many ingredients. I have paired the white sauce with Penne which is my family’s favourite pasta. Since the taste of the white sauce is neutral, you can use it to highlight any vegetable or cheese or protein in the pasta dish you make.

I have taken the classic Mac & Cheese and have given it a twist by adding saffron. Technically this makes it into a “Yellow” sauce. It’s so flavorful and unique that you would want to make it just the very moment you see it or read about it! Which is now, by the way, just kidding! You can add any protein you wish in these pasta dishes. I have shown where in the recipe but took it out too to keep it vegetarian for my vegetarian viewers. Pasta in Red Sauce

Pasta Red

Prep time: 15 mins

Cook time: 10 mins

 

Serving Size: 2

Ingredients

  • Olive oil – 2 tbsp
  • Onion, chopped – 1/2 cup
  • Garlic, crushed – 2
  • Red chili flakes – 1/2 tsp
  • Celery, chopped – 1/4 tsp (optional)
  • Parsley, chopped – 1 tsp
  • Bell Peppers, diced – 1/2 cup
  • Corn, steamed – 1/4 cup
  • Homemade Tomato Puree* – 1 cup
  • Salt to taste
  • Pepper – 1 tsp
  • Oregano – 1/2 tsp
  • Pasta Farfalle, cooked – 1 cup
  • Parsley for Garnish
  • Cheese for Garnish
  • Red chili flakes for Garnish

Direction

  1. In a deep pan, heat olive oil.
  2. Add onions and saute for a couple of minutes.
  3. Add garlic and saute for a few seconds.
  4. Add red chili flakes, celery, parsley, bell peppers and give it a nice mix. We don’t want the bell peppers to cook and loose the crunch.
  5. Now add corn and tomato puree.
  6. Add salt, pepper and oregano. Mix well.
  7. Add pasta and mix well. Adjust the seasoning if required.
  8. Garnish with parsley, cheese and red chili flakes and serve hot.

Note: For *Homemade tomato puree (1 cup), add 2 chopped tomatoes to a pan with 1 tbsp of olive oil and fry until soft. Grind it into a smooth puree once cold.

Pasta in Green Sauce

Ingredients

  • Butter – 1 tbsp
  • Onion, chopped – 1/2 cup
  • Garlic, crushed – 2
  • Bell Peppers, sliced – 1/2 cup
  • Homemade Pesto* – 2 tbsp
  • Spinach puree – 1/2 cup
  • Salt to taste
  • Pepper – 1 tsp
  • Oregano – 1/2 tsp
  • Red chili flakes – 1/2 tsp
  • Pasta Spaghetti, cooked – 1 cup
  • Cheese – 1/4 cup
  • Milk – 1/2 cup
  • Parsley for Garnish
  • Cheese for Garnish
  • Red chili flakes for Garnish

Direction

  1. In a deep pan, heat olive oil.
  2. Add garlic and saute for a few seconds.
  3. Add onions and saute for a couple of minutes.
  4. Add bell peppers and give it a nice mix. We don’t want the bell peppers to cook and loose the crunch.
  5. Now add basil pesto and spinach puree. Mix well.
  6. Add salt, pepper, red chili flakes and oregano.
  7. Add pasta and mix well. Adjust the seasoning if required.
  8. Now add cheese and milk and give it a nice mix.
  9. Garnish with parsley, cheese and red chili flakes and serve hot.

Note: For *Homemade Pesto (1/2 cup), grind together Basil (1 cup), pine nuts (1/4 cup), salt, pepper, pinch of nutmeg, olive oil (2 tbsp) and vinegar (1/2 tsp).

Pasta in White Sauce

Ingredients

  • Butter – 2 tbsp
  • Onion, chopped – 1/2 cup
  • Garlic, crushed – 2
  • Red chili flakes – 1/2 tsp
  • Flour – 1.5 tsp (I have used whole wheat flour)
  • Hot Milk – 1 cup
  • Cheese – 1/2 cup
  • Carrots, sliced and steamed – 1/4 cup
  • Broccoli florets, steamed – 1/4 cup
  • Parsley, chopped – 1 tbsp
  • Salt to taste
  • Pepper – 1 tsp
  • Oregano – 1/2 tsp
  • Pasta Penne, cooked – 1 cup
  • Parsley for Garnish
  • Cheese for Garnish
  • Red chili flakes for Garnish

Direction

  1. In a deep pan, heat olive oil.
  2. Add garlic and saute for a few seconds. Add red chili flakes.
  3. Add onions and saute for a couple of minutes.
  4. Add whole wheat flour (or all purpose flour 2 tsp) and cook till you get a nutty aroma.
  5. Now add hot milk and mix it with a whisk (works better than a ladle).
  6. Stop whisking once you see bubbles. Add cheese and mix well.
  7. Now add carrots, broccoli, parsley, salt, pepper and oregano.
  8. Add pasta and mix well. Adjust the seasoning if required.
  9. Garnish with parsley, cheese and red chili flakes and serve hot.

Pasta in Yellow Sauce (Saffron Mac & Cheese)

Ingredients

  • Olive oil – 1 tbsp
  • Onion, chopped – 1/2 cup
  • Garlic, crushed – 2
  • Red bell peppers, chopped – 1/4 cup
  • Corn, steamed – 1/4 cup
  • Red chili flakes – 1/2 tsp
  • Chicken, boneless broiled – 1/2 cup (optional)
  • Salt to taste
  • Pepper – 1 tsp
  • Oregano – 1/2 tsp
  • Homemade cream cheese* – 1 cup
  • Cheese – 1/2 cup
  • Milk – 1/2 cup
  • Pasta Macaroni, cooked – 1 cup
  • Saffron strands – A few (soaked in warm milk)
  • Cheese for Garnish
  • Red chili flakes for Garnish

Direction

  1. In a deep pan, heat olive oil.
  2. Add garlic and saute for a few seconds.
  3. Add onions and saute for a couple of minutes.
  4. Add bell peppers, corn and mix well. Add red chili flakes.
  5. At this point, you can add broiled chicken pieces if you want or else leave it for keeping it vegetarian.
  6. Add salt, pepper and oregano.
  7. Now add cream cheese, cheese and milk all at the same time.
  8. Saute well on low heat till the sauce comes to a boil.
  9. Add pasta and mix well. Adjust the seasoning if required.
  10. Add soaked saffron and mix again.
  11. Garnish with cheese, red chili flakes and serve hot.

Note: For *Homemade cream cheese (1 cup), first grind 1 cup diced cottage cheese (paneer) until crumbly. Now add 1/2 cup hung curd and grind till smooth.
