Roti Wrap 4 Ways|Tiffin Rolls

It’s that time of the year again when mothers like me start searching the net for Tiffin or lunch box ideas. Summer vacations are going to end soon and we all are going to be busy again and the last thing we want is to spend hours thinking about what to pack in the Tiffin for our munchkins.

While mine is still a toddler, she is fussy about the food she eats and like every mother, I worry and pack what I am absolutely sure she would eat. And hence I also spend hours searching the net for the perfect recipes. To put an end to the needless worry, I have put together a very easy video for quick and healthy roti wraps which the kids are sure to like. Here’s my latest video for the wraps.

Roti wraps are a perfect meal for the little one’s and adults alike and they are so easy to put together. Healthy, nutritious and packed with flavors. Here is the detailed recipe for the roti wraps. Four days a week is taken care of! Phew!

Paneer Kathi Wrap

Serving Size: 2

Ingredients

  • Olive oil – 1 tbsp
  • Onion, finely chopped – 1/2 cup
  • Capsicum, diced – 1/2 cup
  • Garlic, crushed – 1 tsp
  • Tomatoes, chopped – 1/2 cup
  • Red chili powder – 1/2 tsp
  • Salt to taste
  • Black pepper powder – 1/2 tsp
  • Garam masala (all spice powder) – 1/2 tsp
  • Cumin powder – 1/2 tsp
  • Ketchup – 1 tbsp (replace it with tomato puree and sugar)
  • Paneer (cottage cheese), cubed – 3/4 cup
  • Water – 2 tbsp
  • Kasoori Methi – 1/2 tsp (optional)
  • Fresh coriander, chopped – 1 tbsp
  • Whole wheat roti or chapati – 4
  • Coriander Mint Chutney – 1 tbsp
  • Sliced capsicum/sliced onion – 1/4 cup
  • Ketchup – 1 tsp

Direction

  1. Heat olive oil in a pan and once it’s hot, add chopped onions.
  2. Once the raw taste of the onions is no longer there, add capsicum and garlic.
  3. Mix well and add chopped tomatoes. After a couple of minutes, add red chili powder, salt, black pepper powder, garam masala powder, cumin powder and mix well.
  4. Now add tomato ketchup and roast it for another minute.
  5. Add cubed paneer and mix well.
  6. Sprinkle coriander and kasoori methi (if using). Now, the stuffing for kathi roll is ready.
  7. On a whole wheat roti, spread some mint coriander chutney and put some sliced capsicum.
  8. Add the kathi roll stuffing and wrap the roll tightly securing it from all sides, using either a foil paper or butter paper. See the video for more info on wrapping.
  9. Serve hot or pack it in the lunch box.

Shami Kebab Wrap

Ingredients

  • Olive oil – 1 tbsp
  • Onion, finely chopped – 1/2 cup
  • Garlic, crushed – 1 tsp
  • Green chili, halved – 1
  • Capsicum, diced – 1/2 cup
  • Spinach, chopped – 1 cup
  • Mint leaves – 1/4  cup
  • Coriander – 1/4 cup
  • Green peas, boiled – 1/2 cup
  • Salt to taste
  • Pepper powder – 1/2 tsp
  • Cardamom powder – 1/4 tsp
  • Potatoes, boiled and mashed – 1/2 cup
  • Red chili powder – 1/2 tsp
  • Garam masala powder – 1/4 tsp
  • Chaat Masala – 1/2 tsp
  • Lettuce – 1/2 cup
  • Cheese spread – 2 tbsp
  • Whole wheat roti or chapati – 4

Direction

  1. Heat olive oil in a pan and once it’s hot, add chopped onions.
  2. Once the raw taste of the onions is no longer there, add green chili and garlic.
  3. Mix well and add capsicum.
  4. Now add spinach, mint, coriander and peas. Mix well.
  5. After a couple of minutes, add salt, black pepper powder and cardamom powder.
  6. Mix well. Switch off the gas and let the mixture cool down a bit.
  7. Blend together into a coarse mix.
  8. Add boiled potatoes, red chili powder, garam masala and chaat masala.
  9. Mix well and form tikkis. Shallow fry the tikkis until crisp and done.
  10. On a whole wheat roti, spread some cheese spread. Add some lettuce.
  11. Place a shami kebab on top. Spread some more cheese spread and wrap it tightly with an aluminum foil or butter paper.
  12. Serve hot or pack it in the lunch box.

[Note: I don’t use any unhealthy binder like cornflour because it’s manageable to cook without it. A bit soft but still every bit delicious.]

Cream cheese Pinwheel

Cook time: 5 mins

Serving Size: 2

Ingredients

  • Cream cheese (homemade/store bought) – 1 cup
  • Red bell pepper, finely diced – 2 tbsp
  • Yellow bell pepper, finely diced – 2 tbsp
  • Purple cabbage, finely chopped – 1 tbsp
  • Carrot, finely chopped – 1 tbsp
  • Coriander, finely chopped – 1 tbsp
  • Salt to taste
  • Pepper powder – 1/2 tsp
  • Red chili flakes – 1/2 tsp
  • Oregano – 1/2 tsp
  • Whole wheat roti or chapati – 4

Direction

  1. Mix everything together except for the whole wheat roti.
  2. Apply this mixture on the roti evenly and roll the roti.
  3. Cut the rolled roti int pinwheels.
  4. Serve warm or pack it in the lunch box.

Mexican Wrap

Ingredients

  • Rajma or kidney beans, boiled and drained – 1/2 cup
  • Sweet corn kernels, boiled – 1/4 cup
  • Spring onion, chopped – 1/4 cup
  • Tomatoes, chopped – 1/4 cup
  • Coriander – 1 tbsp
  • Lemon juice – 1 tsp
  • Salt to taste
  • Red chili flakes – 1/2 tsp
  • Pepper powder – 1/2 tsp
  • Hung Curd – 1/2 cup
  • Salt to taste
  • Red chili powder – 1/2 tsp
  • Lemon juice – 1/2 tsp
  • Garlic, crushed – 1/4 tsp
  • Lettuce – 1/2 cup
  • Cheese, grated – 2 tbsp
  • Whole wheat roti or chapati – 4

Direction

  1. Mix together rajma, corn, spring onion, tomatoes, coriander, lemon juice, salt, pepper and red chili flakes. Keep aside.
  2. Mix together hung curd, salt, red chili powder, garlic and lemon juice. Keep aside. Alternatively, you can use store bought sour cream.
  3. On a whole wheat roti, place some lettuce.
  4. Add spoonfuls of rajma and corn salsa. Followed by hung curd dip/sour cream.
  5. Sprinkle cheese. Wrap it tightly with an aluminum foil or butter paper.
  6. Serve warm or pack it in the lunch box.
