These 4 salads are meant to do just that. All you need are these 4 versatile and easy to make salad recipes. Each is unique, healthy, balanced, delicious and can be served as a full meal.

First salad is a rainbow salad. One look at this salad and your day will light up! You eat with your eyes first, it’s true especially for this salad. The dressing is quite extra ordinary. The sweet from the peanut butter, the salty from the soy sauce, the spicy from the chili and the sour from lemon. The result is lip smackingly good!

Then I have for you a refreshing play on a humble fruit, watermelon and mint salad. Deep dive into freshness with every bite. Mint in this salad enhances the flavor and the tangy and salty feta paneer adds another dimension to it. I love Feta Cheese but it’s not available everywhere and hence I usually replace Feta with a combination of paneer (cottage cheese), salt and lemon juice.

The next salad promises goodness of green. It’s my favorite salad dressing, mainly because it has two of my favorite ingredients, basil and curd. The green goddess dressing is THE dressing to try. It’s sweet with the aromatic basil, tangy because of the curd and light spicy because of the garlic. I love this dressing also because it coats everything so well and stays there for you to enjoy every bite of this awesome salad. Go get some fresh basil and try this salad now.

The last one is the most simple and my go to salad dressing. You will always have these ingredients in your pantry and this dressing can be made anytime. It has the perfect balance of sweet, salty, tangy & spicy. It goes very well with a lot of vegetable and fruit combinations, which makes it versatile also.

Rainbow Salad

Ingredients

Salad

  • Red Cabbage, thinly sliced – 1/4 cup
  • Capsicum, thinly sliced – 1/4 cup
  • Red and Yellow Bell Pepper, thinly sliced – 1/2 cup
  • Rice noodles or regular noodles, boiled – 1/4 cup
  • Carrot, thinly sliced – 1/4 cup
  • Tofu, cubed – 50 gms (Alternative – Paneer/Cooked Chicken)
  • Black sesame seeds for garnish
  • Red chilies for garnish

Spicy Peanut Dressing

  • Peanut Butter – 1/4 cup
  • Red chilies, chopped or Red chili flakes – 1 tsp
  • Salt to taste
  • Garlic, crushed – 2-3 cloves
  • Lemon juice – 1 tsp
  • Honey – 1 tbs (for added sweetness if required)
  • Olive oil – 1 tsp
  • Soy sauce – 1 tsp

Direction

  1. Make the dressing by blending together the dressing ingredients. Add water if required for a nice and semi thick consistency.
  2. Marinate pieces of Tofu in half of this mixture and grill them or pan sear them for a nice and charred taste. Char them on high heat for less time otherwise the Tofu may become chewy.
  3. Now mix all the salad ingredients, grilled tofu and pour the dressing on the salad.
  4. Enjoy warm tofu with fresh cold salad.

Watermelon Mint Salad

Ingredients

Salad

  • Watermelon, diced – 1 cup
  • Apple, cubed – 1/4 cup
  • Paneer or cottage cheese, crumbled – 1/4 cup
  • Salt to taste
  • Lemon juice – 1/2 tsp
  • Sliced Onion – 1/4 cup
  • Black olives – 3/4 cup
  • Mint leaves – 1/4 cup

Minty Watermelon Dressing

  • Watermelon – 1/4 cup
  • Mint – 1/8 cup
  • Parsley (optional) – 1 small bunch
  • Ginger, crushed – 1 tsp
  • Honey – 1 tbs (for added sweetness if required)
  • Salt and Pepper to taste or black rock salt
  • Lemon juice – 1/2 tsp

  1. Blend together the dressing ingredients for a quick and fresh watermelon dressing.
  2. Make paneer feta by mixing together crumbled paneer, salt and lemon juice. This is an alternative to feta cheese. You can directly use feta cheese as well.
  3. Mix together watermelon, pear, olives, onions, mint and feta paneer.
  4. Pour the dressing over the salad and serve cold.

Green Goddess Pasta Salad

Salad

  • Corn, boiled – 1/4 cup
  • Carrots, sliced and steamed – 1/4 cup
  • Cherry tomatoes, halved – 1/2 cup
  • Farfalle pasta, boiled – 1/4 cup
  • Broccoli florets, steamed – 1/4 cup
  • Lettuce – 1/2 cup

Green Goddess Dressing

  • Basil – 1/2 cup
  • Parsley – 1/4 cup
  • Cashew – 3 to 4
  • Garlic – 2-3 cloves
  • Curd – 4 tbsp
  • Pepper – 1/2 tsp
  • Salt to taste
  • Olive oil – 2 tbsp
  • Lemon juice – 1/2 tsp

  1. Blend together the dressing ingredients. Adjust seasoning if required. Add more curd or water if the dressing is too thick.
  2. Mix together corn, cherry tomatoes, carrots, broccoli, pasta and lettuce.
  3. Pour the dressing over the salad and serve warm or cold.

Mustard & Honey Salad

  • Pear, cubed – 1/4 cup
  • Mixed bell peppers, diced – 1/2 cup
  • Purple cabbage, diced – 1/4 cup
  • Carrots, cubed – 1/4 cup
  • Corn, boiled – 1/4 cup
  • Toasted bread, torn into pieces (optional) – 1/2 cup
  • Lettuce – 1/2 cup

Mustard & Honey Dressing

  • Garlic – 2-3 cloves
  • Honey – 1 tbs
  • Pepper – 1/2 tsp
  • Salt to taste
  • Mustard sauce or (kasundi) – 1 tbsp
  • Oregano – 1 tsp
  • Red chili flakes – 1 tsp
  • Olive oil – 4 tbsp
  • Lemon juice – 1/2 tsp

  1. Blend together the dressing ingredients. Adjust seasoning if required. Add little water if the dressing is too thick.
  2. Mix together pear, peppers, carrot, purple cabbage, corn, lettuce and toasted bread.
  3. Pour the dressing over the salad and serve cold.
