Sandwiches 4 Ways|Lunch Box| Tiffin Ideas

Sandwiches are, have been, will always be, the most consumed quick snack ever. Like you all, I also make a variety of sandwiches and hence I thought why not share a few of my unique and yummy sandwich recipes with everyone.

Pack them for lunch, eat them in your breakfast, take them for picnic or eat them as a snack any time of the day! Sandwiches have been omnipresent in my household. They are always a part of my menu or if I am out of ideas for cooking, they come to my rescue.

One thing which has changed over the past few years is that people have become more conscious of their health and well being and hence the white bread has been replaced with whole wheat grain/multi grain versions. And then there is a section of the society who bake their own bread at home for consumption (Respect!). I have used whole grain bread here and have used healthy ingredients except cheese! You need some cheese in a sandwich sometimes 🙂

Here are the detailed recipes.

Peas & Paneer (cottage cheese) Sandwich

Prep time: 5 mins

Cook time: 10 mins

Serving Size: 2, Makes two sandwiches

Ingredients

  • Onion, finely chopped – 1/4 cup
  • Garlic, minced – 1/2 tsp
  • Butter – 2 tsp
  • Peas, boiled and mashed – 1 cup
  • Milk – 3/4 cup
  • Salt to taste
  • Pepper – 1/2 tsp
  • Mint leaves (optional) – few
  • Flax seeds to sprinkle (optional)
  • Cottage cheese, sliced – 100 gms
  • Chaat Masala – 1 tsp
  • Whole wheat bread slices – 4
  • Butter to spread

Direction

  1. Heat butter in a pan and add onion.
  2. Once translucent, add garlic and saute for a few seconds.
  3. Add boiled and mashed peas and mix well until the mixture is a bit dry.
  4. Now add salt, pepper and milk.
  5. Mix well and continue stirring until it the mixture thickens a bit. If it’s very dry, then add more milk or water.
  6. Add some torn fresh mint leaves and switch off the gas.
  7. Apply the green peas spread on two pieces of whole wheat bread.
  8. Put a cottage cheese slice on each.
  9. Sprinkle salt, chaat masala and flak seeds.
  10. Apply green peas spread on two more slices and use to cover the sandwiches made in the above step.
  11. Apply butter on both sides (outer) of the sandwich and grill them both on an electric grill or on a flat hot griddle on stove.
  12. Crispy peas and paneer sadwich is ready.

Corn & Cheese Sandwich

Prep time: 5 mins

Cook time: 10 mins

Serving Size: 2, Makes two sandwiches

Ingredients

  • Onion, finely chopped – 1/4 cup
  • Garlic, minced – 1/2 tsp
  • Butter – 2 tsp
  • Corn, boiled and mashed – 1 cup
  • Milk – 3/4 cup
  • Salt to taste
  • Pepper – 1/2 tsp
  • Red chili flakes – 1/2 tsp
  • Mozzarella cheese, , grated – 1/2 cup
  • Whole wheat bread slices – 4
  • Butter to spread

Direction

  1. Heat butter in a pan and add onion.
  2. Once translucent, add garlic and saute for a few seconds.
  3. Add boiled and mashed corn and mix well until the mixture is a bit dry.
  4. Now add salt, pepper and milk.
  5. Mix well and continue stirring until it the mixture thickens a bit. If it’s very dry, then add more milk or water.
  6. Add red chili flakes and cheese. Mix well and switch off the gas.
  7. Apply the corn and cheese spread on two pieces of whole wheat bread.
  8. Cover them with a bread slice each.
  9. Apply butter on both sides (outer) of the sandwich and grill them both on an electric grill or on a flat hot griddle on stove.
  10. Crispy corn and cheese sandwich is ready.

Spicy Mango Sandwich

Prep time: 5 mins

Cook time: 10 mins

Serving Size: 2, Makes two sandwiches

Ingredients

  • Mango puree – 1/2 cup
  • Salt to taste
  • Red chili flakes – 1/2 tsp
  • Fresh mango, slices – 1/2 a mango.
  • Whole wheat bread slices – 4
  • Butter to spread

Direction

  1. Heat mango puree on a pan.
  2. Keep stirring for a few minutes until it begins to thicken a bit.
  3. Add salt and red chili flakes and switch off the gas.
  4. If the mangoes are sour, you can add some sugar to balance it off.
  5. Apply the spicy mango spread on two pieces of “toasted” & “buttered” whole wheat bread.
  6. Place fresh mango slices on top.
  7. Cover them with a toasted bread slice each.
  8. Spicy mango sandwich is ready.

Note: If mangoes are out of season, we can use plums, grated apple, etc. with some seasoning.

Curd & Pepper Sandwich

Prep time: 5 mins

Cook time: 10 mins

Serving Size: 2, Makes two sandwiches

Ingredients

  • Hung curd – 1/2 cup
  • Onion, finely chopped – 2 tbsp
  • Yellow bell pepper, cubed – 3 tbsp
  • Red bell pepper, cubed – 3 tbsp
  • Capsicum, cubed – 3 tbsp
  • Coriander, chopped – 1 tbsp
  • Salt to taste
  • Pepper – 1/2 tsp
  • Lemon juice – 1 tsp
  • Whole wheat bread slices – 4
  • Butter to spread

Direction

  1. Mix together hung curd, onion, 2 tbsp bell peppers each, 2 tbsp capsicum, coriander, salt, pepper and lemon juice. Set aside.
  2. Apply curd pepper spread on two slices whole wheat bread.
  3. Sprinkle 1 tbsp of capsicum and bell peppers each.
  4. Cover them with a bread slice each.
  5. Apply butter on both sides (outer) of the sandwich and grill them both on an electric grill or on a flat hot griddle on stove.
  6. Crispy curd and pepper sandwich is ready.
