5 MINUTE MUG SOUPS 4 WAYS|VEG STOCK

Don’t we all love monsoon! Rains, the earthy scent, fresh air, pleasant weather and fried food! Monsoon brings with itself a chill in the air and it’s the perfect weather for soup. Heart craves for something warm throughout the day and hence this post.

I don’t like the soapy taste of pre-maid soup packets which are in abundance in the market these days. But what pushes us to buy those packets? The first and the only hurdle in making soup from scratch at home, is the stock or the soup broth. This is where all the flavor is and no it’s not difficult to make soup stock. In fact it’s easier than making pulses or a vegetable gravy dish. Yes! You just have to chop all the vegetables in big chunks, chuck them all in a big pot with water, season with some dry whole spices, fresh herbs and leave it to simmer for an hour and a half. In fact, you can lessen the time by cooking them in a pressure cooker and your stock will be ready in just a few whistles.

What I have tried to do with this video and this post is to get you the most basic vegetable stock which can be easily made at home. Once the stock is ready, all you need is 5 minutes and a microwave to make yourself a cup of soup with endless flavor combinations! Here’s 4 such soups to help you get started!

Few important things about Vegetable Stock

  • Use seasonal vegetables with neutral taste.
  • Use fresh vegetables.
  • Don’t use salt in the stock and add it when you make soup.
  • Use of fresh herbs like parsley and celery make a huge difference in the flavour and aroma of the stock.
  • Use of whole spices are optional.
  • Keep the stock for 3-4 days in the fridge or use the ice tray hack (click here) to freeze them for longer (Mark the date before freezing and try and use it in a months time).

Basic Vegetable Stock

Prep time: 10 mins

Cook time: 90 mins

Serving Size: Makes one liter stock

Ingredients

  • Carrot, big chunks – 1 cup
  • Knol Khol, big chunks – 1 cup
  • French beans, big chunks – 1 cup
  • Onion, big chunks – 1/2 cup or 1 Medium Onion
  • Celery, big chunks – 1/2 cup
  • Parsley, bunch – one small bunch
  • Aromatics (Cumin, pepper, bay leaf, cloves) – 2 tbsp
  • Ginger, sliced – 1/4 cup
  • Garlic, peeled – 1/4 cup
  • Water – 1.5 liters

Direction

  1. Put everything together in a big pot. Cover and let it simmer on low heat for an hour and a half.
  2. Alternatively, you can pressure cook everything for 4 whistles.
  3. Once done, sieve through a muslin cloth to remove the finer impurities.
  4. Keep aside to cool.
  5. Keep the stock for a week in the fridge or use the ice tray hack (click here) to freeze them.

Veg Tom Kha Mug Soup

VEGTOMKHA

Ingredients

  • Butter – 1 tsp
  • Onion, finely chopped – 1 tbsp
  • Ginger garlic paste – 1/2 tsp
  • Red chili paste – 1/2 tsp
  • Lemon grass stalk – A small bunch
  • Tofu, cubed – 1/4 cup
  • Peas & carrot, steamed – 1 tbsp
  • Salt to taste
  • Pepper to taste
  • Vegetable stock – 3/4 cup
  • Fresh basil – Few leaves
  • Coconut powder or cream – 2 tbsp
  • Lemon juice – 1/2 tsp

Direction

  1. In a mug, place butter, onion, ginger garlic paste and red chili paste. Microwave for 30 seconds.
  2. Mix through and add lemon grass stalk, tofu, peas & carrot, salt and pepper.
  3. Now add vegetable stock, lemon juice, basil and coconut powder.
  4. Microwave for 2 minutes or until mixed through. Keep an eye on the mug and don’t overfill it because it might spill otherwise.
  5. Remove the lemon grass and serve hot with a few more basil leaves on the top.

Lemon Coriander Mug Soup

LEON CORIANDER

Ingredients

  • Butter – 1 tsp
  • Garlic, finely chopped – 1/2 tsp
  • Coriander, finely chopped – 2 tbsp
  • Vegetable stock – 3/4 cup
  • Lemon juice – 1 tsp
  • Broccoli, steamed – 1 tbsp
  • Salt to taste
  • Pepper to taste
  • Fresh coriander – Few leaves

Direction

  1. In a mug, place butter, garlic and coriander. Microwave for 30 seconds.
  2. Mix through and add vegetable stock, lemon juice,  broccoli, salt and pepper.
  3. Microwave for 2 minutes or until mixed through. Keep an eye on the mug and don’t overfill it because it might spill otherwise.
  4. Garnish with fresh coriander and serve hot.

Veg Manchow Mug Soup

VEGMANCHOW

Ingredients

  • Butter – 1 tsp
  • Onion, finely chopped – 1 tbsp
  • Ginger garlic paste – 1/2 tsp
  • Coriander, finely chopped – 1 tbsp
  • Red chili flakes – 1/2 tsp
  • Peas & carrot, steamed – 1 tbsp
  • Corn, steamed – 1 tbsp
  • Broccoli, steamed – 1 tbsp
  • Instant wheat noodles – 1/4 cup
  • Salt to taste
  • Pepper to taste
  • Vegetable stock – 3/4 cup
  • Soy sauce – 1 tsp
  • Oyster sauce – 1/2 tsp
  • Lemon juice (optional) – 1 tsp

Direction

  1. In a mug, place butter, onion, ginger garlic paste, coriander and red chili flakes. Microwave for 30 seconds.
  2. Mix through and add peas & carrot, corn, broccoli, instant wheat noodles, salt to taste, pepper to taste, vegetable stock, soy sauce, oyster sauce (optional)
  3. Lemon juice (optional) – 1 tsp.
  4. Microwave for 3 minutes or until done. Keep an eye on the mug and don’t overfill it because it might spill otherwise.
  5. Serve hot.

Mac Minestroni Mug Soup

MINESTRONI

Ingredients

  • Butter – 1 tsp
  • Onion, finely chopped – 1 tbsp
  • Garlic, finely chopped – 1/2 tsp
  • Coriander, finely chopped – 1 tbsp
  • Red chili flakes – 1/2 tsp
  • Tomato puree – 1/4 cup
  • Peas & carrot, steamed – 1 tbsp
  • Corn, steamed – 1 tbsp
  • Broccoli, steamed – 1 tbsp
  • Basil – few leaves
  • Parsley, chopped – 1 tbsp
  • Salt to taste
  • Pepper to taste
  • Vegetable stock – 3/4 cup
  • Macaroni pasta – 1/4 cup
  • Oregano – 1/2 tsp

Direction

  1. In a mug, place butter, onion, garlic, coriander and red chili flakes. Microwave for 30 seconds.
  2. Mix through and add tomato puree, peas & carrot, corn, broccoli, macaroni pasta, salt to taste, pepper to taste and vegetable stock.
  3. Microwave for 3 minutes or until done. Keep an eye on the mug and don’t overfill it because it might spill otherwise.
  4. Garnish with some dried oregano and serve hot.
