Corn on the Cob 10 Different Ways!

Bhutta in rain is a delicacy. Period. Coal roasted corn on the cob smothered with spices and seasoning is almost as delightful as the rain itself. For me, it defines the flavor of monsoon!

Eating bhutta on a road side when it’s drizzling makes me go all mushy and nostalgic! I fall in love again. I agree I can’t forget my love for samosas but this one is special. It satiates my hunger for something warm & spicy and is also nutrient packed (forget the fat and concentrate on the protein).

Tangy, salty and charred with a hint of spice is what I like. How about you? Wait, don’t answer yet! You are going to be spoiled for choice. Let’s welcome the Bhutta season with 10 different flavors to smear them with! Yes, you heard me! 10 Different flavor combinations. Pick your favorite! Mine is “Thai Spiced Butter Corn” and “Spicy Peanut Butter Corn”

Thai Spiced Butter Corn

  • Butter – 1 tbsp
  • Lemon grass, finely chopped – 1/2 tsp
  • Salt to taste
  • Red chili paste* – 1 tsp
  • Garlic, finely chopped – 1 tsp
  • Honey (or sugar) – 1/2 tsp

Direction – Mix everything together and apply on roasted corn.

[Note – Shallow fry Fresh Red chili paste in some oil until the moisture evaporates. Let it cool. Store for use later]

Tandoori Masala Corn

  • Thick curd – 2 tbsp
  • Red chili paste* – 1 tsp
  • Garlic, finely chopped – 1/2 tsp
  • Chaat Masala – 1/2 tsp
  • Rock Salt – 1/2 tsp (or as per taste)
  • Cumin powder – 1 tsp
  • Coriander, chopped – 2 tsp

Direction – Mix everything together and apply on roasted corn. Roast once again for the charred tandoori taste.

[Note – Shallow fry Fresh Red chili paste in some oil until the moisture evaporates. Let it cool. Store for use later]

Chocolate & Chilly Corn

  • Chocolate syrup – 2 tbsp
  • Red chili flakes – 1 tsp
  • Rock Salt – 1/2 tsp (or as per taste)

Direction – Mix everything together and apply on roasted corn.

Smoky Lime & Jalapeno Butter Cor

  • Butter – 1 tbsp
  • Jalapenos, chopped – 1/2 tbsp
  • Lemon juice – 1 tsp
  • Paprika – 1/2 tsp
  • Coriander, chopped -2 tsp

Direction – Mix everything together and apply on roasted corn.

Garlic & Herb Butter Corn

  • Butter – 1 tbsp
  • Garlic, finely chopped – 1 tsp
  • Oregano – 1/4 tsp
  • Basil – 1/4 tsp
  • Garlic powder (optional) – A pinch
  • Salt to taste (optional since butter is salted)

Direction – Mix everything together and apply on roasted corn.

Spicy Peanut Butter Corn

  • Peanut butter – 1 tbsp
  • Garlic, chopped – 1/2 tsp
  • Red chili flakes – 1/2 tsp
  • Salt to taste
  • Soy sauce – 1 tsp
  • Very little water to maintain a good consistency

Direction – Mix everything together and apply on roasted corn.

Ghee Podi Corn

  • Ghee – 1 tbsp
  • Podi Masala – 2 tbsp

Direction – Mix everything together and apply on roasted corn.

Pesto & Cheese Corn

  • Basil Pesto – 2 tbsp
  • Cheese – 1/4 cup

Direction – Mix everything together and apply on roasted corn.

Hot Green chilly Corn

  • Green chili paste – 1 tbsp
  • Lemon juice – 1 tsp
  • Salt to taste

Direction – Mix everything together and apply on roasted corn.

Indian Chaat Corn

  • Coriander Mint Chutney – 1 tbsp
  • Sweet Tamarind Chutney – 1 tbsp
  • Rock Salt to sprinkle
  • Red chili powder to sprinkle
  • Chaat masala to sprinkle

Direction – Apply coriander mint chutney on roasted corn. Now drizzle sweet tamarind chutney on top. Sprinkle rock salt, red chili powder and chaat masala to taste.
